Researchers close to unleashing rapeseed’s protein power for human consumption

Researchers from the University of Copenhagen have made progress in removing the bitter substances from rapeseed plants, paving the way for it to become a new protein source for human consumption. Rapeseed has been primarily used for oil and animal feed due to its bitter taste, caused by defensive substances called glucosinolates. By identifying the proteins responsible for transporting these substances into the seeds, the researchers were able to develop a method to prevent their accumulation in the seeds, effectively eliminating the bitterness. This breakthrough has significant implications as rapeseed could become a valuable source of plant protein to support the transition to more sustainable diets. The research, conducted on a model plant closely related to rapeseed, was supported by a 10-year grant from the Danish National Research Foundation. The next step is to validate the method on rapeseed plants themselves.
